What is in birch water?
Birch water contains a small but meaningful amount of naturally occurring minerals and compounds, all sourced directly from the soil through the tree's root system. Nothing is added; nothing is fortified.
Manganese supports bone formation and metabolism. Potassium and magnesium are key electrolytes for hydration. Calcium contributes to bone and dental health. Natural xylitol — the same compound found in chewing gum, but here in its natural plant form — is associated with reduced dental cavities.
Sugar content is naturally very low: 1 to 2 grams per 100ml, depending on the season and tree. There is no need to add sugar, no need to add electrolytes, no need to add flavour enhancers — the sap is, in its simplest form, complete.
How birch water is harvested
Each spring — typically between mid-March and mid-April in the Baltic region — mature birch trees begin to draw water and dissolved minerals from the warming soil. The sap pressure inside the trunk rises. This is the window for harvest.
A small spile, similar to those used in maple syrup harvesting, is gently inserted into the bark. The clear, slightly sweet sap drips slowly into a container. The flow lasts only a few weeks. When the trees begin to leaf, the tap is removed, the small wound seals naturally, and the tree continues to grow as before.
This is one of the few commercial drink ingredients on Earth that can be sustainably wild-harvested at scale without harming the source organism. The forest stays as it was.
Birch water vs. coconut water vs. sports drinks
Birch water is often compared to coconut water because both are "plant waters" — naturally produced inside a plant. But the comparison is uneven:
- Carbon footprint: Coconuts are typically transported from the tropics to European markets. Estimated carbon cost is roughly 0.65 kg CO₂ equivalent per can. Birch water from the Baltic region is roughly 0.18 kg CO₂ per can — about a third.
- Sugar content: Coconut water has about 4-6g of sugar per 100ml. Birch water has 1-2g. Conventional sports drinks have 5-7g, often added.
- Ingredients list: Sports drinks frequently contain artificial colours, preservatives and added electrolytes. Birch water contains one ingredient: birch sap.
What does birch water taste like?
Pure birch water is exceptionally clean — slightly sweet, slightly mineral, almost neutral. Lighter than coconut water, more delicate than mineral water. Some compare it to the first sip of water from a cold stream.
